Tiffin

I managed to 'lose' my Tiffin recipe - must get it off the tatty old piece of paper that it resides on!

Anyway - I have decided to put it here in my blog where I can always find it again - I may then furl this page - belt and braces!

Tiffin
It is only fair to warn you, this is not one for any dieters out there....

• 16 oz Digestive biscuits
• 8 oz Dried Fruit e.g. Sultanas, Currants, etc.
• (4 oz Glace Cherries ) optional
• 2 tablespoons brown sugar
• 4 tablespoons cocoa
• 8 oz Butter
• 2 tablespoons Golden Syrup
• 16oz g Chocolate e.g. Dairy Milk, Galaxy, etc.

  • Place the digestives in a large plastic bag and roughly crush them using a rolling-pin.
  • Place all of the dry ingredients in a large bowl (crushed biscuits, dried fruit, cocoa powder, etc.) and mix thoroughly.
  • Line a shallow tin with clingfilm. Swiss roll tin works well.
  • Melt the butter, sugar and syrup with the cocoa in a small saucepan. When melted add the dried fruit and biscuits.
  • Press the ingredients in the mixing bowl into the lined tin and transfer to the fridge or freezer in order to set.
  • Melt the chocolate and pour this over the top of the set "cake". Mark out into squares before the chocolate fully hardens.
  • Place in a fridge to set.
  • Cut into squares and serve.
